Breakfast is my favourite meal of the day. I love all the different types of breakfast foods you can eat, including waffles, porridge, toast and creams. However I think pancakes are definitely one of my favourites!

If you follow me on Instagram, you will have seen that apple and cinnamon is one of my go-to porridge toppings. So I thought why not make it into a pancake topping as well. These apples are soft and juicy but still hold all of there flavour. The rich cinnamon is delicious as well and gives these pancakes an extra kick.

If you have seen my healthy oat and banana blender pancakes post then you will recognise this recipe. I took that recipe and turned it into this recipe! Those healthy oat and banana blender pancakes are perfect if you don’t want to spend loads of time measuring out lots of ingredients, you can simply place all the ingredients in the blender, wiz them up and go! Along with the fact that these pancakes are so simple they are also amazingly heathy.

Instead of flour these pancakes contain oats, this is great as oats provide you with an amazing source of energy to keep you going throughout the day.

However, there is one slight change to the recipe, extra cinnamon! Obviously these being apple and cinnamon pancakes, there needs to be an extra kick. The original recipe did contain some cinnamon, however I have added more to really bring out the flavour.

Instructions
  1. Add all the ingredients (including 2 tsp of cinnamon) to a high speed blender, if your blender is not very fast, make the oat flour first then add the other ingredients
  2. Lightly coat a non stick pan with some cooking spray or oil and preheat to a medium heat
  3. Add some batter to the pan and cook each side for 45 seconds to a minute. Be careful not to press down on the pancake as much as this will stop them being as fluffy. - You will know when they need flipping as they will form around the edges.
  4. Whilst the pancakes are cooking add the diced apple and the remaining 3 tsp of cinnamon to a pan and cook on a medium heat until hot and soft.
  5. Serve the pancakes and apples all together!

  1. I love pancakes for breakfast but I’ve never made them with oats- I’ll definitely have to try that tomorrow! Also, cinnamon is an absolute essential for me, I use it so much especially for breakfast. 🙂
