Simple, chewy and sweet these healthy chocolate and raspberry heart cookies will have anyone running back for more. Perfect for a loved one or special occasion.
In England, Mothers day is Sunday the 26th of March. However, I know in America it is not until next month. Despite this, these cookies are still great for a sweet treat whenever you want something delicious! You could even bake these for any special occasion, or save them for upcoming Mothers day!
If you have read some of my other recipes you may have noticed that I love cookies! They are possibly my favourite thing to eat. I love it when they are crispy on the outside and soft in the middle. These healthy chocolate and raspberry heart cookies may not be like the traditional cookies, but they do still have the crisp on the outside and soft centre!
The icing I have added to these cookies is definitely optional and don’t feel like you need to add it. They are beautiful on their own, however the two different types of icing complement the taste of the cookies beautifully! You may have guessed that I love chocolate by now, however fruit is one of my favourite foods too. The raspberry icing is delicious as the tartness of the raspberries is complemented wonderfully by the sweet biscuits.
To create the heart shape I used a plastic heart cookie cutter, found here, this cookie cutter is great if you are making with small children as it is plastic so doesn’t have sharp edges. Also, these cutters we really cheap and great value!
To make the cookie base you will need some ground almonds. Almonds are a great healthy alternative and also limits the use of flour! Maple syrup is used as an alternative to sugar in this recipe however, you could also use honey to sweeten them up! I also use some melted coconut oil as a binder, however if you don’t own coconut oil you could replace it for some unsalted butter!
