In England, Mothers day is Sunday the 26th of March. However, I know in America it is not until next month. Despite this, these cookies are still great for a sweet treat whenever you want something delicious! You could even bake these for any special occasion, or save them for upcoming Mothers day!

If you have read some of my other recipes you may have noticed that I love cookies! They are possibly my favourite thing to eat. I love it when they are crispy on the outside and soft in the middle. These healthy chocolate and raspberry heart cookies may not be like the traditional cookies, but they do still have the crisp on the outside and soft centre!

The icing I have added to these cookies is definitely optional and don’t feel like you need to add it. They are beautiful on their own, however the two different types of icing complement the taste of the cookies beautifully! You may have guessed that I love chocolate by now, however fruit is one of my favourite foods too. The raspberry icing is delicious as the tartness of the raspberries is complemented wonderfully by the sweet biscuits.

To create the heart shape I used a plastic heart cookie cutter, found here, this cookie cutter is great if you are making with small children as it is plastic so doesn’t have sharp edges. Also, these cutters we really cheap and great value!

To make the cookie base you will need some ground almonds. Almonds are a great healthy alternative and also limits the use of flour! Maple syrup is used as an alternative to sugar in this recipe however, you could also use honey to sweeten them up! I also use some melted coconut oil as a binder, however if you don’t own coconut oil you could replace it for some unsalted butter!

Instructions
  1. Preheat the oven to 180 C and line two baking trays with baking paper or non stick cooking spray. In a medium bowl mix together the ground almonds, flour, melted coconut oil, maple syrup and vanilla extract.
  2. Once all the ingredients are well combined, press together the mixture and press it out onto a surface. Taking a handful of mixture at a time cut out heart shapes, adding the scraps back to the main mix.
  3. Once all the mixture has been used up place them in the oven for 14 minutes or until golden brown. While they are in the oven melt together the ingredients for the chocolate sauce in a pan on medium heat., then place in the fridge.
  4. Once the cookies are done place them on a wire rack to cool and mix together the icing sugar and boiling water for the raspberry icing. Then blend up the raspberries in a food process and stir in. Remove the chocolate sauce from the fridge.
  5. When the cookies are cool, alternate dipping them in the different icings and place back on a plate. Leave them on the plate for the icing to harden before storing them in an air proof container.
Recipe Notes

If you use frozen rasperries be sure to make then soft before using.

  1. yeah, i’ve been seeing a couple of posts mentioning mother’s day, and paired with some hardcore sleep deprivation, made me confused for a bit lol. i’ll start thinking about mother’s day in 1.5 months (; anyways, these sound delicious, and i love how colorful and flavorful the chocolate sauce and raspberry icing sound!
