Easter is just around the corner and I am actually quite looking forward to it! However, I am slightly nervous about all the chocolate there is going to be. But, I just have to remember to eat in moderation and not worry to much about it!

I am also excited because I have decided to push myself and try and do a half marathon next year! The reason why I am writing about it on here is so you can hold me accountable for it. So I can’t decide to quit! Therefore if I am ever lacking motivation I will have you guys to tell me to get back out there and keep going! I have always loved running and really want to push myself to try and do this.

Anyway, lets get back on with these healthy chocolate Easter nests!

These nests are so simple and also incorporate part of my healthy crispy cereal recipe. If you want to use rice krisipes that is totally fine, however I decided I wanted to make it a little healthier. So all I did was take my Rude Health puffed rice cereal and roasted it in the oven with a bit of maple syrup!

All the ingredients in these nests are healthy, simple and combined together, make the most amazing crispy nests!

To top these nests I used chocolate covered honey comb bites, however you can use whatever you like. Mini eggs are a classic, but you could also use chocolate raisins, normal raisins. Or you could even make your own chocolate bites!

The possibilities for these nests really are endless. I really hope you have fun making them. Even if you don’t make them around Easter, they are great as a quick snack. They also provide great fun for little ones!

  1. [If you are using Kellogg's rice kirspies skip this step, but any other rice cereal use this step] Place the puffed brown rice cereal in a bowl with 4 tbsp of maple syrup and mix well. Spread evenly on a lined baking tray and bake in the oven on 180C for 12-14 minutes or until golden brown.
  2. Place the coconut oil, cocoa powder, 12 tbsp of maple syrup and the peanut butter in a saucepan, on medium heat, for a few minutes until it is all smooth.
  3. Once the puffed rice is done add that to the chocolate mix and stir. Line a muffin tin with muffins cases and scoop out some mixture into each case. To get the nest shape, push down the middle to create a dip.
  4. Place in the fridge for around 2 hours, however if you can leave it overnight that is better. Serve on their own or with a topping of choice.
Recipe Notes

If you don't have coconut oil you could try using butter.

It is best to make these the night before so they have time to set.
