These are possible one of the best bites I have made. No joke. They are perfectly sweet from the caramel and chocolate, but also have a hint of salt from the peanut butter. The PERFECT combination!

If you haven’t seen my date caramel recipe yet, go check it out first! These truffles have a base made from that very date caramel. I love it because it is so simple and so easy but it also so perfectly delicious!

Along with being made from the date caramel these healthy peanut butter truffles also obviously contain peanut butter. They also have a beautifully sweet crisp chocolate outer shell.

These babies are also super simple. All you have to do is blend up some dates and water in a food processor. Freeze and add some peanut butter. And finally dunk them in some dairy free chocolate, freeze again and your away. How simple?

The only struggle I have with this recipe is trying to wait before they are fully frozen before eating! I just can’t seem to wait long enough……

Watch out because these are seriously addictive. After eating my first 2 I promptly ate about 6 more before stuffing them away in my fridge so I couldn’t eat any more.

They really are perfect, crunchy on the outside and creamy on the inside. Chocolate-y and caramel-y. Simple and so easy to make. Sweet and salty without being over powering.
If I haven’t pursued you to stop what you are doing and go and make these right now then I’m sorry, I dont know what else to say!

  1. Add the dates and water to a food processor and blend until smooth. Make into balls and place on a lined baking tray. Freeze for 20 - 30 minutes.
  2. In the meantime get your peanut butter ready. If you peanut butter is not to firm, place in the microwave with 1/2 tbsp of coconut oil. Then remove the balls from the freezer and place peanut butter on top. Place back in the freezer for 15 minutes
  3. Melt the chocolate with 1 tbsp coconut oil in 30 second intervals until it is runny. Remove the truffles from the freezer and dunk them in the chocolate. Place them back in the freezer for 30 minutes.
  4. Store the left over truffles in an airtight container in the fridge or freezer.
