Whenever I make cookies I always find myself dipping my spoon into the bowl and eating a bit. Now we all know this is not healthy, but really who can help themselves? I know I can’t!

This cookie dough is not only healthy but doesn’t contain any eggs, flour or processed sugar! Along with being all these great things it can be vegan and gluten-free.

The reason why this is called ‘peanut butter’ cookie dough is because you get a hint of peanut butter when you taste it. However, if you don’t want it to taste like this you can use another nut butter instead and you wont have to worry!

Their are many different ways I love to use this cookie dough. You can spread it onto fruit or crackers, bake into a mug cake (recipe coming soon!), eat with a spoon, mix into porridge and even bake it into actual cookies!

Besides being extremely versatile and delicious, this recipe is actually super easy. All you have to do is add all the ingredients to a food processor and blend. So great because it means it only takes 10 minutes to whip up. Once its made you don’t need to do anything with it and there can be eaten straight away! This is perfect for me as I can never wait long enough for cookies to be baked.

Instructions
  1. Drain the chickpeas and rinse extremely well, then pat dry. Place all the ingredients in a food processor except the chocolate chips, and blend until completely smooth.
  2. Place in a bowl and stir in the chocolate chips and store the leftovers in the fridge, covered.
