Apple crumble is probably one of my favourite things ever! I love the softness of the apples and the crispy and crumbly topping. I could definitely eat it every day if I had the choice! However sometimes some of the store brought apple crumbles are not the healthiest, and the home made ones aren’t vegan! So I decided to create on that takes 10 minutes to make and is healthy and vegan!

This crumble only requires 3-4 ingredients and you can make it as large or as small as you would like it! The one I made serves around 2 people however, you can double up or even triple the recipe to make it as large as you would like!

The recipe is also super versatile. You can use only oats for the topping or add puffed brown rice to make a different type or crispy topping. You can also add other fruit to the base to add a different flavour! I love apple and blueberry or even apples and strawberries!

One of my favourite ways to eat the crumble is hot from the oven. You could even serve it with some vegan custard or ice cream. However, you could also store the left overs in the fridge and add it too some porridge in the morning. Or make a delicious smoothie bowl and use the crumble as a topping!

  1. Line a baking tray with parchment paper or non stick cooking oil and preheat your oven to 180C (360F). Dice the apples finely.
  2. Place the apples in the baking tray and drizzle with maple syrup. Place in the oven for 5 minutes to soften. While the apples are in the oven place the oats and puffed rice in the bowl and coat with the remaining maple syrup.
  3. Remove the apples from the oven and pour the oat topping over. Place the apples back in the oven and bake for 14 minutes until golden brown.
Recipe Notes

If you don't want to use puffed brown rice you can use 70g of oats instead.
