I love making these pizza bagels as a really quick and delicious lunch. The sauce is fresh and easy to make. It doesn’t require blending or adding fancy ingredients. You can also add any vegetables you want to make it taste perfect, and therefore any fussy eater will be happy.

One thing I love about these pizza bagels is they are completely versatile. From the base right up to the ‘cheese’, you can pick anything. I love using whole wheat bagels as I feel they are the healthiest (and I just love the taste). However, it is totally up to you.

You can also experiment with the different ‘cheese’ you use. I love keeping it simple and topping it with some nutritional yeast. However, you can keep it completely plain if you don’t want anything, or you could even try adding some vegan cheese!

This is honestly one of my favourite lunches as it is so quick and easy! I know the idea of a pizza doesn’t sound easy, but trust me this recipe is! It only takes 15 minutes to whip up and tastes so good. One of the things about being vegan is inspiring others to try your food and proving to them that is it super yummy! This recipe is one of the best because it shows that you can still eat amazing food that doesn’t contain any harm or suffering!

  1. Preheat your oven to 180C and roughly chop the tomatoes and pepper. Place them on a baking tray and place in the oven for around 12 minutes. Whilst the veggies are in the oven, cut the bagel in half and toast for 2 minutes
  2. Once the vegetables are done remove them from the oven and place the tomatoes in a bowl. Use a fork to mix the tomatoes together and form a sauce type consistency. Spread them on the bagels.
  3. Finish by topping with the salt and pepper, roasted pepper and nutritional yeast.
